Nduja Grilled Cheese
with Tomato Soup
Directions
Warm the tomato basil soup and keep it warm until ready to serve.
Preheat the oven to 400°F.
On a griddle, toast both sides of the ciabatta buns until golden brown.
Spread 1 oz of nduja on each side of the toasted buns.
Place New Bridge Monterey Jack slice on top of the nduja on both sides of the bun.
Transfer the buns to the oven and bake for about 5 minutes, or until the cheese is melted but not overly melted.
Assemble the sandwich by placing the two sides together.
Return the sandwich to the buttered flattop and toast the top and bottom of the bun until golden brown and warmed through.
Cut the sandwich in half and serve with a bowl of tomato basil soup.

8 oz New Bridge Monterey Jack, thin sliced into 1 oz portions
4 ciabatta rolls, cut in half
8 oz nduja
8 oz unsalted butter, sliced
40 oz tomato basil soup, split into 4 portions
