Aged Cheddar Mac & Cheese
Ingredients
1 Box Short Cut Pasta
1/4 Cup Sea Salt (Coarse)
1 1/2 Lb New Bridge 2 Year Sharp Cheddar - Shredded
2 1/2 Cup 40% Heavy Cream
1 Lb Bacon - Chopped
1/4 Cup AP Flour
1/4 Cup Roasted Garlic Cloves - Mashed
2 Tsp Onion Powder
2 Tsp White Pepper
Directions
In a saucepan, add 1 ½ quart of water and the kosher salt – Bring to a boil.
Add the Pasta. Cook until al dente – be sure not to overcook.
Strain and set aside.
In the same pan, add the bacon and fully render. Remove the bacon and set aside - leave the grease in the pan.
Add the flour and form a blonde roux.
Slowly add the cream – All to thicken over medium heat.
Add the roasted garlic, onion powder & white pepper – Mix completely.
Add 1 ½ lb of the sharp cheddar -Mix until the cheddar is mixed.
Mix the cheese sauce, bacon & pasta.
Fold in the last 1 lb of the sharp cheddar & butter.
Place in individual serving containers – Set aside.
Bake at 400˚ for 10 minutes when ready to serve.
