Aged Cheddar Mac & Cheese

Ingredients

  • 2-3 (7 oz) New Bridge 2 Year Extra Sharp Cheddar, shredded

  • 1 box shortcut pasta

  • 2 1/2 cup 40% heavy cream

  • 1 lb bacon, chopped

  • 1/4 cup all-purpose flour

  • 1/4 cup roasted garlic cloves, mashed

  • 2 tsp onion powder

  • 2 tsp white pepper

  • 1/4 cup sea salt, coarse

Directions

  1. Bring 1 ½ quarts of water and kosher salt to a boil. Add pasta and cook until al dente. Strain and set aside.

  2. In the same pan, cook the bacon until fully rendered. Remove bacon and set aside, leaving the grease in the pan.

  3. Add flour to the bacon grease and whisk to form a blonde roux.

  4. Gradually whisk in the cream and cook over medium heat until thickened.

  5. Stir in roasted garlic, onion powder, and white pepper until fully combined.

  6. Mix in 1 ½ lb of New Bridge 2 Year Vermont Extra Sharp Cheddar until melted and smooth.

  7. Combine the cheese sauce, bacon, and pasta. Fold in the remaining cheddar and butter.

  8. Transfer to individual serving containers. Bake at 400°F for 10 minutes when ready to serve.
