Aged Cheddar Mac & Cheese

Ingredients

  • 1 Box Short Cut Pasta

  • 1/4 Cup Sea Salt (Coarse)

  • 1 1/2 Lb New Bridge 2 Year Sharp Cheddar - Shredded

  • 2 1/2 Cup 40% Heavy Cream

  • 1 Lb Bacon - Chopped

  • 1/4 Cup AP Flour

  • 1/4 Cup Roasted Garlic Cloves - Mashed

  • 2 Tsp Onion Powder

  • 2 Tsp White Pepper

Directions

  1. In a saucepan, add 1 ½ quart of water and the kosher salt – Bring to a boil.

  2. Add  the Pasta. Cook until al dente – be sure not to overcook.

  3. Strain and set aside.

  4. In the same pan, add the bacon and fully render. Remove the bacon and set aside - leave the grease in the pan.

  5. Add the flour and form a blonde roux.

  6. Slowly add the cream – All to thicken over medium heat.

  7. Add the roasted garlic, onion powder & white pepper – Mix completely.

  8. Add 1 ½ lb of the sharp cheddar -Mix until the cheddar is mixed.

  9. Mix the cheese sauce, bacon & pasta.

  10. Fold in the last 1 lb of the sharp cheddar & butter.

  11. Place in individual serving containers – Set aside.

  12. Bake at 400˚ for 10 minutes when ready to serve.
