Cheese and Cracker Pumpkin Pies

Ingredients

  • 1-2 (7 oz) New Bridge Mild Cheddar Cheese, cut into triangles

  • 8 oz cream cheese, softened (for “glue” and topping)

  • Box of Triscuit Triangle Thin Crisps (as the base)

  • Box of Chicken in a Biscuit Crackers (as the side crust)

Directions

  1. Lay out the Triscuit Thin Crisps as the base for each “pumpkin pie.”

  2. Place a triangle of New Bridge Mild Cheddar on top of each Triscuit to mimic a pie slice.

  3. Pipe a small amount of cream cheese along one edge of the Triscuit, then press a Chicken in a Biscuit cracker onto the cream cheese to create the look of a pie crust.

  4. Use a piping bag or zip-top bag with the corner cut off to pipe a small dollop of cream cheese on the wide end of the cheddar slice to mimic whipped cream.

  5. Arrange on a platter and watch them disappear at your fall celebration or Thanksgiving gathering!
